chile powder and hot sauce mixed with sour cream salted to taste.

I usually just go with lime juice to complement the cilantro.

Salsa Habanero

  • 20 Chilis Habaneros
  • 1 White Onion
  • 10 Limes

  • Squeeze the limes and separate out the seeds.

  • Blend the chilis in a blender. To reduce the heat you can remove the seeds.
  • Cut the onion in half rings
  • Mix the lime juice and blended chilis in a plastic 4x9 tupperware
  • Add the sliced onions and stir
  • Refrigerate over night
  • Use sparingly as this salsa is E X T R E M E L Y hot.

It will not last more than a couple of days in the refrigerator so enjoy it quickly.

Salsa Negra.

  • 1 package of dry Chilis de Arbol (the long thin red chilis) like you see in Chinese food
  • 2 Roma tomatoes
  • 1 tablespoon oil
  • Water

  • Fry the tomatoes until soft

  • Fry the chilis whole until they are black. Warning: The smoke is very strong and will make it difficult to breath so remove children and sensitive adults from the house during this process.
  • Put the tomatoes and chilis in a blender
  • Add water to blend
  • Blend until it is a paste
  • Add water to get the consistency you want
  • Put in the refrigerator once it has cooled.

Always use a clean spoon to take it out of the bottle or jar. Never put a dirty spoon in the jar. If a spoon has touched any other food don't use it. If you follow the rule the salsa will last about a month.

Mix with Mayo for tacos de pescado, add straight to soups and stews, in rice, and beans, on eggs, etc.

Warning: This salsa can be E X T R E M E L Y hot depending on the age of the chilis so use with caution until you learn the proper dosage.

Once you try it you will be hooked and you won't eat anything without it.
