The translator gives "vacaciones de verano" for summer vacation. Is this correct." Why the plural vacaciones?

Yes, that's correct. Spanish-speaking people always have their vacation or vacations in plural (vacaciones). I guess it's more fun that way.

Well, really, we usually have holidays in English too.. The summer holidays are very long for parents of small children.

Its just one of the quirks of Spanish. The word is only plural.
English has its quirks as well.
