Help with "Odio" and "No me gusta"?

"I hate school" is "Odio la escuala".... So why is "I hate cheese" "No me gusta el queso".... I'm sure this means "I don't like cheese"; could I not just say "Odio el queso" meaning "I HATE cheese" rather than "I DON'T LIKE cheese"? Thank you!

Odio seems to be a much more personal and intense dislike than Gustar. This kind of hatred is usually not associated wit h food
