This concept is one of the more confusing one in Spanish because in English they are both translated, "I am".
It's what comes after estar and ser (the infinitive form of estoy and soy) that lets you know which one to use.
A very general rule (that you will find doesn't always work) for you when you are just starting is that estar is "loco" - for lo - locations and co - conditions that can change.
Ser is used for more permanent situations like your profession or your family position or a general characteristic of personality that is unlikely to change.
There are great lessons on this site under the grammar section (under learn on toolbar) for the verbs 'ser' and 'estar' and of course, as Ian says, there are very understandable video lessons.
But we all have to wrestle with this one. Later you will learn that even the word 'tener' can mean "I am" in certain situations.
