If you're asking what this means I think it's a chilenismo and it means to really enjoy something such as an event or get together.

Chancho means pig. So it is an exaggeration. We pigged out or We had a mighty good time.

Here's a page that explains how chancho is used in general in Chile:
Specifically it says the below for your expression:
Y pasarlo chancho es disfrutar mucho ("ayer nos reunimos toda la familia a cenar y lo pasamos chancho").
As Kiwi-Girl stated it means to have a good time.
disfrutar mucho = to really enjoy
A more generic version of this is pasarlo bien.
