When do you use a mi?
Does this make sense? A mi me encantan leer los novelas romanticas? Or do I always have to follow 'a mi' with gustar?

Your sentence makes perfect sense except that you'd use the singular "encanta" because it refers to "leer" a singular thing.
A mi me encanta leer las novelas romanticas. (I love to read....)
If you were talking just about books, you'd say:
A mi me encantan los libros. (I love books.)
Generally, we just say, "Me gusta el cine" (I like the movie theater). When you are comparing two different views, for example:
John says, "I like chocolate ice cream" and you say, "Well, I like vanilla." You are emphasizing what you like in comparison to John.

No. The subject is "leer" a single verb, so you'd use "encanta."
A mi amiga Julie le encanta leer........el pediódico, los libros, etc." (She's not loving the books but loving to read)
Think of it this way:
Me gustA = it pleases me (to read, the apple, to swim, a book, etc.) You can use a singular verb or a noun.
Me gustaN = they please me (to read and to swim, books, apples) You can use plural verbs or nouns.
Saying "mi", is referred to using "me" or "I", it's usually used as a posesive, "Mi guitarra", "mis cosas", "mis cajas", or it can be used to say "I like" something =)
