What is the difference between: "Ve" and "Vayas"? The 2 verbs are informal subjunctives meaning "Go!". Can we use either one of them or there is a difference?

There is a difference. Go! => ¡Ve! Don't go! => ¡No vayas! That is for the commands (imperative). However, for subjunctive, you wouldn't use "ve" ever; always use vayas.
