"How much bread do you want?" can be written in Spanish as the two following sentences: 1. ¿Cuánto pan quieres?
2. ¿Cuánta pan quieres?

I want to make sure if the listener is a male, you(the asker) say sentence 1 to him, and if the listener is a female, you say sentence 2 to her. Is that right?

No, "cuanto" refers to the noun about which you are asking "how much", so it needs to match the noun in number and gender. Since "pan" is masculine singular, you use the masculine singular "cuanto", not "cuanta" which is the feminine singular and doesn't match "pan". So it's "cuánto pan..." It makes no difference what the person's gender is who you're talking to.
