'añorar´ vs ´echas de menos´
What is the difference between 'añorar´ vs ´echas de menos´? I am confused

Añorar to me is to miss in the sense of longing for something. To yearn or miss an event from the past. Even to wish that things from the past were to come back again.
Añoro los días que pasamos en Buenos Aires. How I miss those days we spent in Buenos Aires.
Añoro las comidas de mi madre. I miss and I wish I could have one of my mom's meals (assuming she's no longer around to make them).
Echar de menos is to miss someone or something that has been gone but not necessarily long gone. It is not as dramatic as añorar.
Te echo de menos, ¿cuándo regresas? - I miss you. When are you planning to come back?
Echamos de menos tu paella. We miss your paella (I hope we will get to have it again).
