You have received some good answers from some of this forums top people. You can search the internet for "useage of ser and estar" and find sites that go into detail but, to put it simply, ser is used to express what someone or something is, such as nationality, occupation, intrinsic physical characteristics, etc. and estar is used to express how something is. For example, "La manzana es verde" would be referring to a green variety of apple (there are some apples that are green even when they are ripe) and "La manzana estä verde" would be used to express the condition of a red delicious apple that is not yet ripe.

It sounds like you have the misfortune of a teacher who makes students memorize a bunch of stuff without teaching much of anything.
I only know of 1 "rule" for "ser": conjugate it correctly just like any other verb.
When to use "ser" as opposed to "estar"? When you are indicating the nature of something or someone. Use "estar" to indicate a state of being, ie: "Yo soy feliz" (I am a happy person). "Yo estoy feliz" (I am happy - at the moment).
