I want to know how to say - what do you think? - as in , what is your opinion?

I found this on a previous post.

¿Qué te parece? or

¿Qué opinas?

How do you change it into, what does Juan (Steve,Bob, the man next door )think about....

would it be?

qué Juan parece sobre....?

Thank you

so an example sentence would be

Qué le parece a Juan sobre perros?

why is the indirect object pronoun le (to him) used in this sentence on not in the others

¿Qué piensa Juan sobre X?

What is Juan thinking about x?

as in what's on his mind or what are his thougts/opinions

Which is the most common expression, which am I most likely to encounter during everyday conversation
