¿Cuál es más común? ¿Voy por agua o voy a conseguir agua? En México se dice voy por algo.

Voy por agua or voy a buscar agua (conseguir is more elaborate, usually implying an effort or winning a raffle).
In Spain they say "Voy a por agua". Just in case you come across that variant.

Tienes razón en lo que dices del uso en México. Usar "conseguir" en este contexto sonaría muy extraño.
Podrías usar "conseguir" así, ej: "Hasta abajo del pozo voy a conseguir agua" pero en este caso no estás yendo a una parte para llevarla a otra, ej: a casa.
