interesarse por/en = to be interested in

ser aficionado a = to be fond of or keen on something

"Una afición" is similar to "a hobby", so "afición" is more intense than "interés", it involves a "hands on" attitude, or a continuity in time, through several months or years. An "interés" is only intelectual, or in a lesser degree.
