Literally and without regard for Franco's fantasies, try this sentence from Wikipedia: "The process of caramelization consists of heating sugar slowly to around 170 °C (340 °F). As the sugar heats, the molecules break down and re-form into compounds with a characteristic color and flavor." So it's metaphorically about a transition point, in this case a transition to something sweet, delicious and desirable. Need I say more?
