Tacos do indeed come from Mexico - the name is Spanish, but they are around in Mexico long before the European settlers.
Wikipedia seems to have a pretty complete entry on tacos. Where does the taco originate?

The taco predates the arrival of Europeans in Mexico. There is anthropological evidence that the indigenous people living in the lake region of the Valley of Mexico traditionally ate tacos filled with small fish. Writing at the time of the Spanish conquistadors, Bernal Díaz del Castillo documented the first taco feast enjoyed by Europeans, a meal which Hernán Cortés arranged for his captains in Coyoacán.[5][6] It is not clear why the Spanish used their word, "taco", to describe this indigenous food.
Tacos begin with tortillas, a type of unleaven bread. I can't say if they started here in Mexico or elsewhere (native american indians also use unleaven bread). But I can say that tortillas are served with every meal enen if not served as tacos the people use tortillas as a way to scoop up bites of whatever they are eating. And yes tacos are everywhere and stuffed with everything. There are basically two types of tortillas, corn and flour. Both are extremely common.
Tacos are basically a type of unleaven bread made from basic grains like corn, wheat... common in mexico but certainly not exclusive
