Fui criado (on - con?) frijoles rojos y arroz
I actually wasn't raised with red beans and rice. But, we live in the south, Mama was from New Orleans, and I've lived in the south a good many years (as well as other places). Anyhow, I'm confused about how to express that I was raised on red beans and rice.

You are using the past participle of "criar" which means "to raise" but it also creates a confusion as "criada" also means "maid, or servant (sirvienta)." It would be more clear if you use the perfect (preterite) tense, first person singular, of criar which is "crié". But your statement requires the pronominal form, or passive voice, in which the verb acts upon the subject. Therefore the pronominal pronoun "me" is required which changes the meaning from "I raised..." to "I was raised.."
Me crié con frijoles rojos y arroz.
