How would I say: "I studied for five hours last night".
Would I say "Estudiaba por cinco horas anoche". or "Estudié por cinco horas anoche".

Since you studied for 5 hours and then stopped, then you would need the preterite "Estudié". Anoche is a clue that the action stopped and is no longer happening.
By the way, you do not need "por" in Spanish. You can say "Estudié cinco horas anoche".
