Should I say "Este/a soy yo" or just "Soy yo" or is this wrong altogether'

Eddy is right, if there are say, two boys and 20 girls in your class, we will have to say.

Estos somos nosotros.

This doesn't apply to your question and I know this will annoy most woman and I personally think it wrong, but normally when you are referring to a collective group of people which contains One male and One thousand females, the masculine form must be used.

este soy yo (male)

esta soy yo: (female)

Mujer, however there are many males and females that will be using this sentance. (It is for a group of toddlers that are trying to learn Spanish.)

or woman?

Eres hombre o mujer?

if you're man you should say = éste soy yo ór soy yo
if you're woman you should say = ésta soy yo or soy yo
