How would I say: Elena dives on the weekends.

Is this correct: Bucea Elena los fines de semana.

The original word for Bucea is Bucear. So, in this case would I just drop the ar and just leave the "a" since Elena is the pronoun ella?

That is correct! The subject, Elena, takes the 3rd person feminine pronoun (ella). The él/ella/usted form of the verb bucear is bucea.

It would also be correct to place the subject in front of the verb, i.e. Elena bucea los fines de semana.
