Here in Guatemala they say "Carne de res" most often to refer to cuts of beef, but "Carne molida" to refer to ground beef.

If I were to order one in a restaurant I'd say "Un bistec, por favor."

The have "lomito" on the menu quite often, but I consider it "mystery meat" because nobody has explained exactly what part of the cow (or whatever) it comes from!

Bistec is the Spanish version of Beef steak. Filete is more appropriate in my book, but each country has its own way of saying it. My favorite is bife de chorizo, which is a delightful Argentinean beef preparation.
