Gender agreement. ¿Cuántos días hay en un mes? How many days are there in a month? Días is masculine, therefore you need to use the masculine form of "How many" in Spanish, which is cuántos.

¿Cuántas hamburguesas te comiste? How many burgers did you eat? Hamburguesas is feminine, therefore, you need to use to use the femenine form of "How many" in Spanish, which is cuántas.

Moreover, cuánto and cuánta also exist. They are the equivalent of how many for singular subjects. ¿Cuánto dinero tienes? How much money do you have? masculine singular. ¿Cuánta sal quieres? How much salt do you want? feminine singular.

I hope this helps.
