For example how would I take a dramatic pause and say so... I don't suppose it would just be tan... How would I say... "So... anyways..." in Spanish

Pues, los hispanohablantes hablan tan rápidamente que, si no hables con fluidez excepciónal, sería mejor no pararte, porque hay un riesgo grande que no podrías resumir para dos horas.

Well, the Spanish speakers talk so fast that, unless you speak exceptionally fluently, it's best not to risk stopping , because you may not be able to get a word in edgeways again for two hours.

I think that many times this function is held by words like "Pues...", "Así que...", "bueno...".

"Anyway" can be "de todas formas", "de todas maneras", "qualquier manera", or a few others, depending on context.
