I'm a man, and I write a letter to my friend who is a woman. At the end of the letter, what should I written me querida or me querido? Explain me please. Thank.

I agree with everybody else answers, Mi querida (or just Querida mia) for a woman Mi querido (or Querido mio) for a man at the start of the letter id correct but.... you do not use Dear Jhon if you are a man. In the old times in my country (Argentina) was common for a man call another man querido( queriido) and kiss each other in the chick, but WRITING querido is a little bit too much
You should start the letter with:
Querida Luz del Día ( or whoever)
and finish it with
abrazos, besos, abrazos fuertes or similar.
She may then write back, starting : Querido Bayonguen.

If I got your question right, what you want to use its actually "Mi Querida", I'm more of an informal Spanish speaker so I don't have the grammar explanation on why, but I'm sure somebody can help with the explanation.
Both Annie and Saratoga are correct.
Mi querida amiga = My dear friend
Querida Maria = My dear Maria
Mi querida princesa = My dear princess
Etc.
You get the idea.
