I learned in the lessons that most words ending in 'e' will take 'el' . How can it is ' la carne' instead of 'el carne' ? Is it an exception?

Almost all the nouns ending in "a" will be feminine , what it means the article will be la/las/ una unas. Almost all the nouns ending in "o" are masculine, article will be el/los un/unos And that is the rule with a few exceptions like el dia y el poeta With "e" is different you have la madre y el padre, la sangre , la carne, la calle, la torre, el asistente, el mate, right there you need to know a little bit more The noun is always masculine if ends in aje ( el coraje) an always feminine if ends in ie ( la serie) in other cases depends the evolution of the word or certain specific rules ( numbers are always masculine( el trece, el catorce). If you want to know more I can find and paste for you some rules for the genero de los sustantivos

Unfortunately, the only way to know the gender of "e" nouns is to memorize them.

There is no rule that states that nouns that end in "e" are masculine. They can be masculine or feminine.

Take "la fuente" as an example.
