A question about comer verb conjugation.

I do not live in Spain. And I only want to learn Latin American Spanish. Could I use "Comen" instead of "Coméis" For third person plural "You all eat"

I'm trying to learn "Los Verbos" (¡Es muy dificil!)

Yes you can. Comen means they eat/you all (formal) eat.

You are right in thinking that the vosotros forms for the second person plural (informal) are rarely used outside of Spain. These forms for "you all" are normally replaced by using the "ustedes" conjugation, or "comen".

I would caution you that while the vosotros form is not generally used in conversation outside of Spain, you find it quite a bit in writing, especially in translated books. You should at least have a working knowlege of vosotros if you want to be truly well-based in Spanish.
