hello there,

I'm stuck and would be very grateful to anyone who could offer me some help here... what exactly is "... who can make me laugh" in Spanish? For example, "I like people who can make me laugh!"

would that actually be something like "...que puede/n hacerme reír"?

Sí, tu intento es correcto: "Me gusta la gente que puede hacerme reír".

Otras posibilidades:

"Me gusta la gente que consigue hacerme reír"

"Me gusta la gente que es capaz de hacerme reír"

would "sabe" hacer me reir also be a possibility ?
