Does dejemos que sea mean let it be because other sites say different if so what dialect is it?

Without context this doesn't mean much to me. However, I think you have the right idea. Dejemos que la reunión sea más tarde. Let's allow the meeting to be later. Dejémoslo ahí. Let's leave it there. Etc.

Dejar que + subjuntivo is a way of saying "allow" or "let be."

This does not belong to any specific dialect, it's just universal, common Spanish.

In my country we usually use de expression "déjalo vivir su vida", or just "déjalo vivir".
