which correct form of ser or estar would best fit this sentence mi familia _ católica

I agree with Ken. You use "ser" because you are speaking of a religion, which is taken to be an intrinsic characteristic of yourself, much like your profession.
Mi familia es católica. Ser third person/object and familia is singular, on the other hand you could say Todos en mi familia son católicas. Everyone in my familey are cathlics.
Exactly, if it's an intrinsic invariable (or at least very unlikely to change) characteristic, then it will require a form of SER. (even though it could hypothetically change)
Things that come to mind are religion, nationality, as already said, profession, or personal charcateristics such as intelligence (one could take a knock on the head, but normally, once intelligent, always intelligent) or appearance (soy Rubio, o Moreno, or gordo etc etc)
