Are these sentences constructed correctly?

Question

A quién le interesan en la política? A mí me intereso en la política.

¿A quién le interesa la política? A mí me interesa la política.

Who is interested in politics? Politics interests me.

A quién is singular so the verb interesar does not need to be plural (interesan). Since politics is the subject ( which is considered singular), it does not need to have the preposition 'en.' If you want to use interesarse, the reflexive verb which means to take interest in something, you need to remove a mí.

Me intereso la política. ( I take interest in politics.)

A mí me interesa la política. The subject here is Politics. It is interesting to who? Me. A mí is in a prepositional form for emphasis to the indirect object pronoun of the verb interesar. Me is is the indirect pronoun.

It would still not be appropriate to put 'en.'

If you made the subject plural like for example, '¿A quién le interesan sus opiniones? (opinions is plural here so we use the third person singular form of the verb interesar).

En is a preposition used in expressing subject matter too. (tema) Es un experto en la materia -> He's an expert on the subject. Es doctor en medicina -> He's a doctor of medicine.

For other uses of 'en' you can check, (http://www.spanishdict.com/translate/en). The 'en' preposition is not necessarily used with the the verb 'interesar' as it is implied in a way.
