Rigth way:

Muchas personas creen que todas las familias hispanas son grandes

As for the other words, if their subjects ("familias" in this case) are plural, then the adjectives are plural, too (grandes). That goes for the rest of them, too. Some words are tricky, though; like the word "gente," for instance. Although "gente" means people and implies many people, the word itself it singular (it's not "gentes").
