If you conjugate a verb, does it matter if I use -os or -as? EX: Hablar Hablas italiano. Hablos italiano.

Yes, it matters very much. In spanish, the conjugation of the verb tells who is doing the action.

yo hablo = I talk /// tú hablas =you talk /// él/ella/usted habla = he/she/it talks /// nosotros hablamos = we speak /// vosotros hablaís = you all talk /// ellos/ellas/ustedes hablan =they / you (all) talk

Oftentimes, you will notice that spoken and written spanish will completely omit the yo,tú, él, so the ending of the conjugated verb says everything. Verbs are not like nouns or adjectives, which do change endings depending on gender/number of things.
