Hi!
Hide = esconder
Seek = buscar
"Hide and seek", the game, means "Las escondidas", but it's also called "las escondidillas" or "el escondite".
"Play hide-and-seek" = "jugar a las escondidas", "jugar a esconderse", "jugar al escondite".

If you're referring to the game "hide-and-seek" it's "el escondite" ejemplo: Cuando los cachorros crecieron, comenzaron a jugar al escondite y a simular luchas. When the cubs got older, they began to play hide-and-seek and fight mock battles.
