Do I say amiga or amigo?

If I want to say "Thanks, my friend!" and I'm a woman and my friend is a man, would I say "íGracias, mi amigo!" or "¡Gracias, mi amiga!"

Also, is this the correct sentence structure in the first place?

Yes, you are correct about the structure of the sentence:

You can say: Gracias, mi amigO (...because your friend is a man)

It makes no difference that you are a woman, because it is the person you are speaking of or to that determines the gender of the word: amigo/a in this context/situation.

When speaking of both men and women in the same sentence you would use the plural amigOS You would only use amigAS if you were referring just to female friends in the plural wink

If you are speaking to a woman you would say Gracias, mi amigA

If you were wanting to say: I am going to visit my friend you would say;

Voy a visitar a mi amigO (if your friend is a man) or a mi amigA (if you friend is a woman)
