Hi:

In China nobody speaks Chinese. There are three oficial languages: mandarin is the most spoken (75%); then you have sheshuan and cantonese.

Translating to English the written forms of those languages is not too big a problem if you have some experience with the chinese dictionaries where "words" are searched by the number of strokes they have in the "pictogram".

But if you never did it, better try to find someone with experience.
