En mi libro de español, es una frase ¨... habla española que son los que escogen¨. I don´t understand why there´s que son los que in there. In my understanding, it means 'that they judge', but I´m not clear on that. What does los refer to?

I think los is used in a sense to include all who fall in the categroy of what's in the clause. Like, "Los que no trabajan no va a ganar dinero." Those who don't work will not get money. Sorta like that. Correct me if I'm wrong anyone please.

Es la que lleva un sombrero. = She the one wearing a hat.
Son los que salen de la piscina. = They're the guys coming out of the simming pool.
Son las que bailan en la pista. = They're the girl dancing on the dance floor.
