Ex. I am looking for a housekeeper. Her duties would include washing dishes, doing laundry, dusting, etc.

Busco ama de llaves. Sus tareas incluirían lavando los platos, lavando la ropa, limpiando el polvo, etc.

Or would it be: "...lavar los platos, lavar la ropa, limpiar el polvo, etc." ?

Would it be the same rule for the following:

...which included dancing and singing. (Context: some kind of play/show)

...including talking on the phone or using the internet. (Context: grounded kid)

In this case you should use the infinitive.

In your other examples, also the infinitive. In this kind of structure, you use the gerund following estar, andar, seguir, continuar... They can be implied and not actually said. For example,

(El chico continua) ...hablando, riéndose, y moviendo la cabeza.
