In the sentence: Ser is not used very much in the preterite. I don't understand what preterite means.

The preterit is a verb tense in the indicative mood in Spanish.

It is one of the two simple past tenses in Spanish. The other is the imperfect.

Ser is not used very much in the preterite.

This means that "ser" is not used in this particular verb tense very often, which I agree with. "Ser" is much more common in the other simple past tense, the imperfect.
