Lo demás vs Los demás
In which cases is the plural form used? Cuz from my understanding lo demás means 'the rest', which already seems to include all the people in the excluded group, so a plural version makes as little sense to me as 'the rests'.

It depends how you use them as they can be pronouns or adjectives 
This is my take -
Adjective: demás means other, remaining, the rest of the
NB because an adjective modifies the noun the article that goes with demás must match the noun too
los demás invitados - the other guests
Los demás días de la semana - the other days of the week, the rest of the week
Irán llama a las demás naciones europeas ...... Iran calls the rest of the European nations .....
Noun/Pronoun: demás means others, the other ones - once again the article needs to match the noun that demás is standing in for but in it's singular form 'lo demás' just means the rest or everything (sing) else
La vida, el universo y todo lo demás. Life the universe and everything else.
Los demás vendrán pronto. The others will come soon.
or
Estoy esperando a los demás. I'm waiting for the others.
and
Me quedé, los demás se fueron. I stayed, the others left
Los demás no han venido. The others haven't arrived.
Lo que distingue a nuestra literatura de las demas de Europa es ......
