Why is the a and o different in buen(o)s días and buen(a)s noches?

You might expect 'día' to be a feminine word because it ends in 'a' but this is an exception and it's masculine 'el día'. For that reason if you use an adjective to describe 'the day' it also needs to be masculine and because you're talking about 'días' plural any adjective would also have to be plural.

Bueno as you have pointed out comes in lots of different forms but the masculine, plural form is 'buenos' so 'buenos días.

Noches on the other hand is feminine and plural - so buenas noches. smile

Because the word día is masculine and the word noche is feminine. In order to make the adjective match the noun their endings change to masculine o, and feminine a.
