"¿Cómo es?" is used for a formal "what are you like?" and "¿Cómo eres?" for the informal. Can we do the same thing when it is more specific? eg. If "¿Cómo es ella?" is "What is she like?" can we also say "¿Como eres ella?"

It would be ¿cómo eres tú? If you were to use the subject pronoun, which you do not need for eres because it is the tú form. Welcome to the forum. :) - EL_MAG0, Dec 28, 2011

I think you have the formal / informal versions of SER mixed.

There is only 1 form of formal, and 1 form of informal

The informal happens to be eres. Como eres? This is in relation to speaking to "you"

The formal version, es, Como es? This is relation to speaking to "you" formally. (he or she as well)

So when you say "ella" this is no longer the relation of "you" so the formal/informal doesn't apply so you wouldn't say "Como eres ella" The correct way would only be "Como es ella?"
