The answer depends on what you want to say:

Mis padres: My parents

Mi padre: My father

Mi padres is incorrect. It is mis padres.

Possessive adjectives agree in number and gender with the thing possessed; not with the possessor.

sus coches=her/his/your cars (one owner, two cars)

los coches suyos=her/his your cars

su coche=their car (two owners, one car)

el coche suyo=their car
