Also, I noticed the word for sofa or couch, is "el sofá".

The word sofá still ends with an "a" but it comes out as a masculine noun. Does the accent automatically change to from a feminine word to a masculine one?

There is pretty much no pattern around these irregular nouns that don't follow the normal rules for feminine and masculine. I'd just memorize them and move on.

The accent at the end has no effect on whether a word is masculine or feminine.

No, that is not the case.

Mamá is feminine.
