fundir y derretir es casi lo mismo, se emplea uno u otro dependiente del material.
para queso se puede usar Queso derretido o queso fundido, pero lo que mas se suele decir es Queso fundido

Yes, that is also used, but the spelling is derretido.

Question for native speakers: ¿Cuál es la diferencia entre queso derretido y queso fundido? ¿Es que queso derretido es más cerca de ser líquido'

Yes. Or you could say "Calienta [algo] hasta que se funda el queso."
