"Mi novia es muy bonita" is fine (my girlfriend is very pretty).

"A mi novia es muy bonita" - I don't think it correct. I think it should be "Para mi novia es muy bonita"? (It is very pretty to my girlfriend).

A mí (don't forget the accent) is used to be emphatic.

"To me" I like coffee.

A mí me gusta el café.
