how would you say "I care about you"...

...in Spanish? I can't figure it out for the life of me. Thanks in advance!

Two verbs come to mind to be used for this purpose. "Preocupar" is one of the verbs and the other is "importar". In their replies, GarrettSilva and Netjert have both chosen to use preocupar. I do not suggest their choice is incorrect.
For me, as between the nuances and shadings of the two verbs, importar would be my verb of choice. My logic for that is that to me, preocupar conveys the idea of worry or negative concern while importar makes me think more of mattering in the sense of being important.
For that reason, I suggest that:

"I care about you" = "Me importas tú."

Collins gives almost the same interpretation as Feliz's post in so much as,

Querer mucho a alguien - To care deeply about someone

but

Interesarse por algo - To care deeply for something.

Preocuparse appears to be "concerned about"

In my Book of phrasal Spanish verbs and Oxford Spanish Dictionary: Spanish section two verb constructions are given: interesarse por alguien and querer a alguien

So based on those I would say that you could probably say:

Me intereso por ti = I care about you

Quiero a ti = I care about you

Preocuparse is used to care about in the sense of being worried or concerned but it seems to have/carry negative connotations.

Me preocupo por ti = I am worried about you

Me intereso por ti.

In my opinion, two expressions are almost the same meaning (each one has his nuances) But.......

"Me preocupo por ti" is used in 90% of cases, so my vote is for this. wink
