How do I say "draft"--a kind of check or negotiable instrument drawn against an account? Insurance companies often use this term, but I have never heard of this in Mexico.

I believe that "giro" is a common translation for the type of draft you are referencing. It is commonly used in "giro postal" (money order), but it is also used to refer to any sort of check or payment that is issued to a third party, such as an insurance draft.
