yo mire' la frasa "Voy a comerme unas galletas!" ... que es la diferencia entre esa y esta: Voy a comer unas galletas"

I would think the first phrase emphasizes that degree you like galletas. "Voy a comerme" sort of double affirms your intentions to eat with the "me" pronoun.

"Voy a comer unas galletas" is more of a simple statement.

La primera frasa es muy fuerte (con la pronombre me) y el segundo es tranquillo.

Eat some cookies vs. eat every last bit. This reminds me of a phrase: Si cocinas como caminas, hasta las chispitas me como.

Comerse can also be used in the following phrases

Me comí un bocadillo - All I had to eat was a sandwich, I only ate a sandwich

En un mes se comió toda la herencia - He blew his entire inheritance within a month

Se comen unos a otros - They're at daggers drawn
