Ese, eso, and esa are demonstrative adjectives meaning "that". Ese is used before masculine singular nouns, esa is used before feminine singular nouns, and eso is used for a singular noun whose "gender" is unknown. If you would like to read about and practice this concept, click here.
Ese perro es muy feo. --- That dog is very ugly.
Since that perro is singular and masculine, we use "ese".
¡Esa galleta es enorme! --- That cookie is enormous!
Galleta is feminine and singular, and we are talking about that cookie. Hence, "esa"
¿Qué es eso? --- What's that?
We don't know what that is. Is it a dog, a cookie, a sailboat, a lawnmower...we don't know!
Es is not related to these adjectives. Es is a form of the verb ser, meaning "to be". It is the third person singular form of "ser" in the present indicative.
See that last example above? It uses "es" as "is".
Mi madre es rubia. --- My mother is blonde.
"Mother" is the third person, and I'm only talking about 1 mother. That means we should use "es".
Es maestro. --- He's a teacher
El gato es gordo. --- The cat is fat.
La banda es talentosa. --- The band is talented.
Esa persona es muy alta. --- That person is very tall.
