Condolences: How do I express sympathy and sorrow?

I have just come home from a break and learnt that my Spanish friend's mother has died. I want to send a message saying I'm sorry. How do I express condolences? I know I should use pésame but I don't know how to fit it into a sentence. Also I don't know the cultural requirements and standard phrases... Any help would be greatly appreciated. * Please put this into the most suitable category, I would like some helpful phrases but also some suggestions on what is appropriate in a different culture. I know my friend well but have never met her mother.
