This is not exactly right, it is but it is quite rude to call an old person viejo.

Anciano is the right word.

Your title doesn't match your question.

Old man - viejo

Hasta luego is more along the lines of see you later, which is a perfectly acceptable way to say good-bye. However, if you want good-bye, adiós is your best choice.
